Salted Caramel, Banana Cashew Smoothie

I went to my friends wedding on the weekend out in Raglan. I'll write a post about it and how I stayed on track with The #paleovegan Project soon. But for now, I wanted to share this quick recipe inspired by the weekends events.

We were at my friends parents house, and her brother brought out these Banana, Salted Caramel Macaroons. Ok, so they didn't quite meet my #paleovegan requirements, but there was NO WAY on this earth I was going to pass up trying this. They had been made specially for a charity event, not a food item you see every day. I'm a foodie at heart, and I love experiencing new flavours, so I simply HAD to give these banana goodies a taste. Seriously, the most epic macaroon I had ever eaten.

So today, I thought I'd recreate the experience in a #paleovegan smoothie. Now, this has maple syrup in it - and there is a debate whether it is paleo or not. We'll discuss that in another post.

SALTED CARAMEL, BANANA CASHEW SMOOTHIE

Into the Magic Bullet => 1.5 frozen bananas, 1/4 cup soaked cashews (still wet), coconut water, 2 TBSP real Maple Syrup, pinch of salt (approx 1/8 tsp). You may need to adjust your ratios for your perfect salted caramel hit. 

Blend it up. And melt into heaven!
