Rocketing Into Week #3

Just a short post today. I'm a bit busy with other things.

But, never too busy to eat great food! On the right is the DELICIOUS oven roasted rosemary potato fries, sprinkled with nutritional yeast and served with a homemade tomato sauce. Super simple - just tomato paste, balsalmic vinegar and maple syrup. Devine,



And here on the right, is my Farmers Market haul for the week. As I mentioned in an earlier post, I suspected my FM shop was going to last 2 weeks, and it did! In fact, as I headed into week 3, I still had things left, so I made sure to prep them up so nothing went to waste. This week from the market I have got: 2 bags of potatoes, 2 bags of cherry tomatoes, 3 avocadoes, 3 spaghetti squash, Macadamia gold muesli (all nuts and seeds!), 2 eggplant, 2 Quince (I've never tried quince before), a 500g punnet of blueberries, 2 bunches of kale and 2 bunches of parsley.  $65 of fruit n veg. Fresh and organic.

To your left here, is a blueberry, banana, macadamia smoothie! Tasted soooooo good. Not as good as the salted caramel smoothie I made though! 

Each week, I make a giant bowl of salad, so that I can just grab big handfuls easily. It usually lasts 2-3 days, and then I make a fresh batch. This weeks salad combo is flat leaf kale, parsley, spring onion, and capsicum.

I roasted up some left over carrots, courgette and scallopini from 2 weeks ago, and served that on top of the salad. It was a flavour explosion! I added some home made pesto, along with a drizzle of balsalmic and maple syrup. Now THAT was an epic combo. 

It's really not that hard to eat well when you pull finger. And it's not hard to change your diet and try something new when you stop the complaining and just decided to do it. I'm not telling you to eat PaleoVegan. That's my journey right now. But I know in the past when I told myself it's going to be hard and "How will I get to the farmers market, how will I find the time to make food, how will I do this, how will I do that" - that it just made it so much harder.

I literally woke up at 8.30am on Sunday and by 8.35am I was in the car to the market to get all the good stuff. I was still rubbing my eyes, I didn't shower, I just got it done. 

Like I said, I'm pretty busy right now - but boy, I'd be a whole lot busier (and less nourished) if I spent time complaining, or in my car every day to go and buy food because I wasn't prepared.

So far, I've lost 1.4kg eating this way, not counting calories or portions. I think the tiny investment of effort is worth it so far!
