Cute little Banana and Chia Seed Puddings

Oh my goodness you guys, this has to be the easiest gluten/dairy/soy/additive free thing ever to make.  I have a confession, I love cooking but I hate it when it takes too many dishes out of circulation.  This Chia pudding hits the sweet tooth minus the pain of cleaning up...you can make it in the bowl you're going to eat it from!

So easy you guys.  Basic Chia pudding is this: (approx one serving, depends on your macros)
2 TBSP Chia Seeds
1/2 Cup coconut milk.
Mix, refrigerate for an hour and eat.  Yum, just like that on it's own is delish.  I had it with some banana and pineapple slices.

Anyway, here's my Chia and Banana Pudding
2 TBSP Chia Seeds
1/2 Cup coconut milk (I actually had none, so I used 1/4 cup coconut cream and 1/4 cup water)
1/2 tsp banana essence
chopped dried banana, as much as you like (not banana chips...use dried bananas)
a few grinds of the vanilla grinder.

Mixed, refrigerated and devoured.

I'm planning on having pudding for every afternoon snack this week.  I think you should too.
