Blueberry Chia Jelly/Jam/Pudding
I found a recipe for Chia Seed Jam, but being a freestyle cook I decided that I'd just bang something together without the recipe. It needs some tweaking, but overall not too shabby. I tried on gluten free toast with butter and enjoyed it! I've also been putting it on top of my Banana and Chia Seed Puddings. Chia Madness!
Here's how I did it for the small amount I made.
Boil 1/2 cup frozen blueberries in approx 1/2 - 3/4 cup of water, and then let simmer to reduce. It should look kinda syrupy after about 5-10 minutes. Keep an eye on it. I also mashed the blueberries in the pot as it was cooking so I didn't end up with any lumps.
Once cooked I added 3 sachets of plain stevia to it, but you can use any sweetener you like. Dip your finger in and make sure it's the sweetness you want.
Then add Chia Seeds and mix well. For my one I used about 2TBSP.
The Chia seeds soak up all the liquid which is why you want to make sure you're not boiling the bejesus out of your fruit.
