Carrot Oatcakes

This tastes just like carrot cake!!  Yuss!!!  *FIST PUMP*
1 cup of rolled oats soaked.  ½ tsp mixed spice, ½ tsp cinnamon.  ½ grated carrot, 1TBSP Rapadura Sugar.  Ok, so for some of us, the gluten in Oats can't be tolerated - me, I seem to be ok with it...for now.

Mix the ingredients together to form a soft dough type mix.

Heat a frying pan up and add 1TBSP coconut oil
Fry oatcake for about 1-2 minutes on each side (till just browned and stuck together)

Serve, and sprinkle a little bit of Rapadura Sugar on top if you like.


How do these things stick together I hear you ask?  The wet oats release starch which keeps them stuck together.  If the mix is too dry it may crumble.

Different oats will get different results also.  Quick cook oats will go really mushy, while Whole oats definitely need overnight soaking to release their starches.

I didn’t have any soaked oats left so I just used quick cook organic oats and added enough water to make the dough (about 3 TBSPS)
