Chocolate Chip Cookie Dough Bites
Ok, so I think I just died and went to gluten free cookie dough heaven. This isn't my recipe, I'm not sure where it came from, as I've seen it posted by a few people on the net. I made a double batch - here it is.
2 x 390g tin chickpeas
4 tsp Vanilla Bean Paste
1 cup Peanut butter ( I just used a 300g jar)
1/2 honey (melted)
4 slightly heaped TBSP coconut flour (the original recipe uses 1tsp baking powder, but I wanted to be different)
1 cup chocolate chips (for dairy free or vegan option, use cacao nibs)
Preheat oven to 175degreesC or 350degreesF.
wet hands slightly and roll cookie dough into balls and place on a well greased tray (baking paper is recommended). Bake for about 10 minutes, check the bottom, if golden brown then you're lookin good. I then turned the grill on and just gently browned the tops for about 2 minutes. Keep a good eye on them, they have the ability to burn quickly.
I made mine too big, I'm struggling to get through the one I'm eating, and chickpeas are a high FODMAP food and sure enough seem to be bloating my sensitive belly as I type this. Ah the joys of food intolerences and gut healing, its a freakin journey that's for sure. I hope these wee cookie dough bites help take the misery out of your gluten/dairy/soy free life :-)
