Coconut Ice Slice
I made some pesto last weekend (which reminds me, I MUST post that for you), anyway, I had some leftover pine nuts and some other left over bits and pieces from other creations so I made this amazing coconut ice slice.
- 1/2 cup (in total) pinenuts + dessicated coconut - lightly toasted
- 2 cups macadamia nuts
- 1/2 cup dessicated coconut
- Zest of 3 lemons (in hindsight, I think I might use 5 next time)
- 1/4 cup raw honey + 1/3 cup coconut oil (heated to liquid)
Toast pinenuts and coconut in coconut oil. Not too many, just the half a cup listed under ingredients, it adds a nice hint of toasty nuttiness to the dish.
Heat coconut oil and honey in a pot, till just liquid.
In a blender, whizz up your macadamia nuts and coconut until all the huge bits are gone, then add the lemon zest and toasted pinenuts/coconut and oil/honey. Blend all of it together. Press evenly into a slice tin and chill in the fridge until solid.
