Vanilla & Coconut Breakfast Muffins

I simply love how we don't have to tie ourselves to cereal or toast for breakfast!

Here's this weeks creation - Is it an omelette in muffin form, or a muffin trying to be an omelette?  Who knows, but this thing is mostly egg so not really a muffin as such, but a great and tasty source of protein for breakfast!

INGREDIENTS:

  • 6 eggs
  • 6TBSP Buckwheat flour
  • 1 + 1/4 cups of dessicated Coconut - or thereabouts (I did 1 cup and 6TBSP)
  • 4 TBSP Coconut Sugar
  • 1/2 - 1 tsp ground vanilla bean (or whatever form you want your vanilla to take)
  • 120g Apple sauce (why 120g?  I've found these great little sachets and that's the amount they come in - it worked well!)

Blend all ingredients together and distribute evenly amongst 6 Texan Muffin tins - well greased. Bake on 180degrees Celcius or 350F (my oven is F) for 10-15 mins or until golden on top.

WARNING!!!
I used those cupcake paper cup things.  And the muffins stick like a devil to them - so use cupcake paper cups at your own risk/peril.  Probably better to line your muffin trays with baking paper.
