Dairy Free Basil Pesto
I had a little play around with this pesto and I think I've found the best way to replace the parmesan cheesy-ness that pesto has. Here's my recipe
2 huge handfuls of basil, 1/4 cup (ish) olive oil, 100g pinenuts, 100g macadamia nuts, 2-3 TBSP homemade chicken stock and 1-3tsp of fish sauce (the stock and the fish sauce replace the parmesan flavour...so add these to taste along with a pinch of salt)
Blend everything in a food processor. Technique varies depending on how awesome your food processor is (Mine is crap)
*Update ... I now have the worlds most amazing food processor!
But here's how it turned out, and it tastes yum...however, I needed to just add a tad more salt to it.
