Lusciously lemon & ginger pancakes

Show yourself some lemony love with this cute wee treat. 

This is for a single serving, so just scale up the recipe according to how many people you're making these for.

If you're an emotional eater, sugar craver or binge eater ... make one of these up (eat it slowly and with mindfulness) and nourish your body while soothing your soul. 

INGREDIENTS (SINGLE SERVING)

  • 1 TBSP Coconut flour
  • 1 TBSP Buckwheat flour
  • 1 TBSP Powdered Ginger
  • 2 organic free range eggs
  • 4 TBSP coconut milk
  • 2 packs Norbu Sweetener
  • grated lemon zest (you choose how zesty you want it ... I did half a lemon)

METHOD:

Blend / Shake all ingredients together and cook in 2tsp coconut oil until just golden. once cooked, serve with a squeeze of lemon juice over the top and sprinkle on a pack of Norbu Sweetener (erythritol)
