Parsley Pesto

Steak and Salad might sound boring, but when you think of all the different ways you can "salad" it's not so boring at all!  And if you're gluten, dairy, soy free your food choices are limited so it's always a good idea to flex the creative muscle.

Micro-salad for this dish
Alfalfa  sprouts
Tomato
Avocado

Parsley pesto
Basically just as much parsley as you can shove into the food processor, nuts of your choice (I like cashews), a bit of salt and olive oil.  You really can use any quantities you like.  I use a whole bowl of parsley, about 2-3 cups of nuts and approx 1/2 cup of oil.... but I mix it and taste as I go.

You can do the same to come up with the best tasting pesto for you.

Serve with steak or protein of your choice.
I find the pesto with the steak and tomato was a beautiful combination.
