Raspberry Slice/Macaroon thing
Cool name huh. I was originally going to make a slice, but then I got all freestyle and went nope, I'm going to make cute little round cakey things out of this. It's kind of a macaroon I guess.
Anyway, to make the cake I mixed together 1/4 cup coconut flour, 1/4 cup coconut cream, 4 eggs, 2 sticks of Natvia, 1 tsp vanilla essence and 3-4 TBSP of melted coconut oil.
I spread it out on a baking tray and chucked it in the oven on 180degrees for about 10-15 minutes. Use baking paper, makes life so much easier. (Is baking paper gluten free...... she says, wondering) Anyway, don't put this too close to the bottom element or the bottom will burn.
Once it was cooked, I cut out circles. I used a medicine cup and managed to get 14 circles to make 7 "cakes"(I'm struggling to work out what to call these things.
For the raspberry filling, I slightly thawed 1/2 cup of frozen raspberries and then mixed with 2 TBSP of melted coconut oil, once the oil hit the frozen berries it went a bit firmer, kind of like a "butter" but not really. Details, meh.
So then I jammed one side of my cake, and popped another on top and hey presto, some sort of macaroon, raspberry slice type thing. Chucked them in the fridge to set a little bit in the centre.
Tasted so delish I ate them all in one day (what a little piggy). Just so you know, the raspberry filling WILL seep through the cake a bit, so they won't always look as good as the picture. But I don't care for looks, just gimme what tastes yum!
