Salmon & Spinach Grain Free Quiche
I made a huge dish of this for lunch this week since I'm a bit flat out. This recipe made me 8 very handsome portions.
12 eggs, 500g pack of frozen spinach (thawed), 1 large onion chopped, 600g chopped fresh salmon, 3 big tablespoons coconut flour, 1/4 cup (ish) coconut cream.
I layered the glass baking dish with onion, salmon and spinach. Mixed in a bowl, eggs, coconut flour, coconut cream and seasoned with salt. Then tipped the egg mixture over the the other ingredients.
Baked on 180degrees for about 20-30 minutes. I kept checking it to ensure the whole thing had baked through.
Wahlah!! A sturdy quiche that I am totally hooked on!
