Super Rad Red Soup

Red nose day is coming up on the 15th of July and I'm a total freestyle cook so I've created an antioxidant rich, cancer preventative soup with a beautiful red colour.  I've written 8+ servings, as my 1 serving was so filling that you may find it stretches out further.  Portion into containers and freeze for an easy and nutritious winter meal (minus the white bread and butter)

INGREDIENTS:
2 medium onions
1 large potato
1 bulb of garlic
1kg ORANGE kumara
2 beetroot
4 small heads of organic broccolli
and for the yummy kick - 200g feta and 100g blue cheese
2L of water

METHOD:
Dice up and fry off garlic and onions in a little olive oil until transparent in a large soup pot.  Cube potato, kumara, beetroot and chop broccoli and add to onion and garlic with 2L of water.  Bring to the boil and simmer with the lid on until all the veg are soft.  Then add cheeses, salt and pepper to taste.  Blend in food processor until smooth (you may like to wait an hour for it to cool a bit
ABOUT THIS SOUP:
Broccoli contains lutein and zeaxanthin, indole-3-carbinol and sulforphane, which may help protect against certain cancers.  Garlic and onions contains allium compounds which can help the immune system fight cancer cells.  Orange Kumara is high in carotenoids which are fat soluble antioxidants helping to protect the fatty membranes of cells.  Betaine is found in beetroot and is liver protective and a great tonic for the blood.  There are plenty more compounds to be found, these are just a few.  The cheese.....well, that's just because it tastes great!
