Vegetarian Pasta Stirfry
Yeah I didn't know what to call this, it is what it is.
I'm down to what I like to call "Back of the Pantry" items. You know the tinned and dried stuff that kinda gets lost in the abyss. Grocery day is Friday and I've been away in Australia for a few days so I just decided to make do with what I had.
So here's what I had to work with:
- Adzuki Bean Pasta (GF/DF/SF)
- Cannellini Beans
- Green frozen veg
- Hickory smoke liquid
- Fish sauce (to be vegetarian you can use soy sauce)
- butter and/or coconut oil
And here's what was created:
Boil up the pasta and greens in 2 separate pots...or together, whatever you like.
Panfry onion in butter (or coconut oil) and then add cannellini beans.
Add flavouring from fish sauce and hickory smoke sauce.
Dump the cooked pasta and greens into the pan and mix thoroughly (easier said than done. but still do-able)
Season as you go with salt, fish sauce and smoke hickory flavour.
In terms of portions, I used everything all up as you see their, full packets. I only used half a pack of greens. Use as much butter/oil and seasonings as you wish according to your needs.
This blew me away, I thought it was going to be just another "Oh well...at least its food" dinner, but turns out this had a beautiful savoury flavour to it and didn't need a sauce. Although I did add a mountain of butter to the top and some more fish sauce.
Ok so the fish sauce doesn't make it taste fishy. Hear me?!! Don't get all freaked out about fish sauce. Use liquid smoke low and slow too, you dump too much of that in and it will taste like shit.
Vegetarians switch the fish sauce for soy
Vegans do the same, and switch the butter for coconut oil and leave out the liquid smoke unless you are sure it wasn't derived by smoking meats.
Moral of the story, use your pantry items and don't judge a book by it's cover.
